Summer Dinners Menu Plan




Menu planning in summer is fun- there is so much great produce available, it's easy to grill, and we tend to linger more at meals.This menu plan includes some of my favorite summer dinners- they are fresh, simple, somewhat light, and quick. We eat a lot of chicken around here, but if your family is not so crazy for chicken it would be easy to substitute other meats in some of these recipes, or go vegetarian for a couple. You'll notice there's not a lot of links because they are easy dinners you don't even need to open a recipe book or Pinterest to know how to cook- now that sounds like lazy summer to me :)


Tuesday- Steak with Bell Peppers and Fresh Bread
Thursday- Grilled Chicken with Corn on the Cob and Loaded Baked Potatoes
Friday- Carne Asada Tacos with Black Beans and Guacamole
Saturday- Grilled Chicken with Broccoli and Hummus
Sunday- Taco Salad



I would especially recommend the Barbecue Chicken Flatbread from skinnymom.com, it is really easy, and SO yummy. My husband requests it frequently. The corn and black beans are complemented perfectly by a tangy barbecue sauce, our favorite is Sweet Baby Ray's.
