Menu Plan Monday: Reminiscing on a Delicious Week



Happy start of a new week, and happy November! We have a crazy week ahead: Parent teacher conferences Monday and Wednesday mean we will get home around 9 pm, my husband's birthday Wednesday (poor guy has to work all evening), and headed west on Thursday night. I think the thought of seeing friends and family over the long weekend will keep me sane this week!

The menu plan I'm sharing today is from a few weeks ago. Unfortunately this weeks food is going to look MUCH different- think pizza, microwave meals, grilled cheese and soup. But that's what happens sometimes when you get crazy busy.

Monday- Quinoa Corn Chowder and Rolls
Tuesday- Chicken Pad Thai
Wednesday- Honey Glazed Salmon, Roasted Broccoli, Mac and Cheese
Thursday- Barbecue Chicken Flatbread
Friday- Baked Mozzarella Chicken Rolls and Green Beans
Saturday- Chicken, Bacon & Spinach Pizza with Creamy Garlic Sauce (my own recipe!)
Sunday- Crockpot Turkey Chili and Rolls

We are pretty solidly sticking to Meatless Monday and Crockpot Sunday. Low carb Wednesday has been a tricky one for us... as you can see we ended up with mac and cheese. Not exactly low carb. Continuing to try to find low carb dinners that are a) filling b) I'm not allergic to c) my husband will eat. It's been tougher than I thought!

Everything on this menu plan is flavorful and delicious, I have to rave about two of them specifically. The Honey Glazed Salmon from Damn Delicious is the most flavorful salmon I've ever had. Super tasty. Secondly, the Baked Mozzarella Chicken Rolls  from Pinch of Yum were wonderful. I had the pleasure of preparing them with a friend and they were fun to make too! I also have to mention the Chicken, Bacon & Spinach Pizza with Creamy Garlic Sauce, a super yummy pizza I blogged about last week, follow the link to read my post!

  1. That pizza looks yum- especially the garlic sauce! I will have to try the baked mozz. chicken rolls too- that is right up my alley for sure!
