Raspberry Topped Lemon Pie

Since getting married, I have noticed my husband has a variety of UK-sounding phrases such as "spot a car",  and traditions like playing cribbage and having corned beef and cabbage on St. Patrick's Day. We've observed that the new phrases he's heard from me are things like "reckon", I introduced him to biscuits and chocolate gravy, and the song "I'm my own Grandpa".  I've realized that my familial Oklahoma roots show more than I thought!

My mom's side had a family get-together this summer and our desserts were Texas sheet cake and Tenessee pea-pickin' pie. It hit me again that, without a doubt, we have some Southern roots. 

I think one of those ways those roots show is through love of pie. This recipe is a classic in my mom's recipe book, and I remember it from my childhood. It's a quick and easy pie that's perfect dessert for a hot August evening playing banjo on the porch.
A short list of ingredients bring this pie together quickly.
Defrost the berries in a pan over medium heat. 
stir in the corn starch and sugar and let the mixture thicken.
Fresh squeezed lemon juice is a must!
Beat the lemon juice with egg yolks and condensed milk. Bake. 
Pour the raspberry topping over the lemon pie.

Serve!

Raspberry Topped Lemon Pie

Ingredients

10 oz frozen red raspberries
1 Tbsp corn starch
2 Tbsp sugar
3 egg yolks
14 oz can Eagle Brand condensed milk
1/2 cup lemon juice
Graham cracker crust
cool whip 

Directions

1. Preheat oven to 350 degrees. 
2. Thaw berries in small saucepan over medium heat until soft. Add cornstarch and sugar, cook and stir until mixture thickens. Remove from heat and set aside.
3. In a medium bowl, beat egg yolks, stir in condensed milk and lemon juice. Pour into graham cracker crust. Bake 15 minutes.
4. After removing pie from oven, pour berry mixture over the top. Chill at least four hours, serve with cool whip. 
My mom, sister, and I about to enjoy some pie. My mom says this recipe was originally in Taste of Home.

  1. I love how we all, no matter where we live, can have strong bonds to our roots through food. This pie sounds yummy! Now I'm off to Google the song "I'm My Own Grandpa"... I'm intrigued, but also a little scared! ;)
