Homemade Chicken, Bacon & Spinach Pizza with Creamy Garlic Sauce

About three years ago I realized how much I love pizza.

I mean, pizza is every middle schooler's favorite food and everyone knows it's good, but I feel like I just truly discovered pizza a few years ago. And then my senior year in college this amazing pizza place called Yeasty Beasty opened. Seriously, check out their Instagram. It had the best crust and all these delicious, unusual topping combinations. That took pizza to new heights for me. Then, I started making homemade pizza.

Topping a homemade pizza with red sauce and pepperoni is always good, but one night (channeling our inner Yeasty Beasty) we wanted to try something new. We ended up with this savory white sauce pizza topped with greens, tasty chicken and bacon, and two cheeses. We have yet to go back!

This pizza is unique, scrumptious, and pretty easy too!




This combination is also great with kale instead of spinach. Pesto or sundried tomatoes might be a nice touch. Mushrooms are basically outlawed in my household but I think they would go great too.

You may use any dough you like for this recipe, I usually use the Better Homes & Gardens recipe. However, if I'm in a hurry a prepared dough from Walmart or Winco is great too, or even a Boboli crust!

Most of the time I just play around with ingredients in a saucepan to make a white sauce (it's kind a fun experiment every time). The most recent time we made this pizza it was for guests. I decided I better not take a risk so I used a recipe. The sauce recipe is from food.com.

Ingredients:

1 Recipe pizza dough
3 cups spinach
1 lb boneless skinless chicken breast, cooked and cut into small strips
4 slices bacon, cooked and cut into small segments
2/3 cup cheddar cheese
1/3 cup Italian cheese

Sauce Ingredients:

1 tbsp butter
1½ tbsp flour
 ½ cup milk
¼ tsp salt
a dash of pepper
1 garlic clove, minced
1 tbsp basil
¼ cup parmesan cheese


Directions:

1. Roll out the pizza dough and prick with a fork. Bake in a 375 °F oven for 8-15 minutes, checking frequently.
2. To make sauce, heat butter in a medium saucepan over medium heat. Add flour and stir until completely mixed. Gradually whisk in milk. Stir in remaining ingredients. Raise temperature to medium-high and continue stirring until thickened.
3. Spread sauce over cooked dough. Sprinkle with cheddar cheese. Distribute spinach, chicken, and bacon. Sprinkle the Italian cheese over the top. Bake for 8-10 minutes or until cheese is melted.

  3. Yum ~ love this! I'm not one for a lot of tomato based sauces in Italian food and prefer white sauce. I think this is a recipe that I must try! :) Think I'll add some onion and green pepper.
