African Peanut Soup and Naan Bread

I love trying new flavors, especially at home. It's an adventure to try new recipes and ingredient combinations. Last week I made African peanut soup and Indian naan bread, and it was so delicious and flavorful I just had to share it here! 

My Grandma initially introduced me to African peanut soup with a delicious chicken soup recipe. I absolutely adore peanut butter, so anytime you can add that flavor count me in! This recipe gives a fresh twist by including kale and cilantro. This crockpot recipe is not only easy and SO flavorful, but it's also gluten free, dairy free, and vegetarian. 





African Peanut Soup
ingredients:
1 Tbs canola oil
1 onion, thinly sliced

1 Tbs minced garlic
1 tsp ground ginger
6 cups vegetable broth
1/2 cup creamy peanut butter
1 14 oz can diced tomatoes
1 tsp salt
pinch of cayenne 
2 cups thinly sliced kale leaves
1/3 cup fresh cilantro leaves
1/3 cup peanuts for garnish 

1. In nonstick skillet, heat oil over medium heat. Add onion and cook 5 minutes until softened, stirring frequently. 
2. Add garlic and ginger, stir constantly until fragrant, about 30 seconds. 
3. Transfer onion mixture to a slow cooker. 
4. In a small bowl combine 1 cup broth with the peanut butter, whisk until smooth and add to slow cooker. 
5. Add remaining 5 cups broth and stir. Add tomatoes, salt, and cayenne. Cover and cook 4-6 hours on high or 8-10 hours on low. 
6.  Stir in kale, cilantro, and peanuts immediately before serving. 

Daniel isn't a big fan of tomatoes, but he's fine with them blended up so I threw them in my ninja for a few seconds to make them less chunky before I added them to the soup.
For the naan I followed a recipe I found on Pinterest from Budget Bytes. This recipe had really helpful step-by-step visuals. Honestly, I am really bad at baking non-sweet breads and usually give the job to Daniel. I wanted to prove to myself I could make bread, and it worked! I made the naan on the griddle to speed things up and it worked totally fine. It takes a little time, but is definitely worth it. 
 The soup and the naan together gave us a wonderful, light dinner full of Eastern and African flavor.
